Seta by Antonio Guida

Incredible experience. I had the classic tasting menu. Chef Guida and crew work so hard on every aspect of your experience, from flavor and texture balance to wine pairings to every aspect of the atmosphere. From their signature risotto dish to their delicious gnocchi balanced with a touch of fresh apple to the delightful meringue dessert, I enjoyed every bit of my experience.
One of the best restaurant experience I’ve ever had. Food is amazing, the service is super professional and friendly, the place is beautiful. I had the tasting menu “seta way” and it was just amazing
Seta was our choice for a birthday dinner, and the decision proved fitting. Chef Antoni Guida’s cuisine is accomplished and refined each dish carefully composed, the ingredients clearly of high quality. That said, for a two-Michelin-starred kitchen, the flavor impact left me wanting a little more. I’ve encountered equally memorable plates at more modest Michelin Guide addresses, which made the culinary side feel slightly below the expectations the accolades set. Where Seta is truly beyond reproach is in everything that surrounds the plate. The dining room is quietly spectacular and elegant without being cold, intimate despite its grandeur. The service is the kind that anticipates without intruding, attentive from the first moment to the last. The pacing, the presentation, the atmosphere all flawless. A restaurant that earns its reputation through the totality of the experience. The room and the hospitality alone make it worth the visit.”
I am a happy amateur in fine dining ("chasing stars" since 2023, a couple every year), but I have to strongly disagree with the 3/5 reviews. From the restaurants I have tried, I would say only the 3 starred Hajime in Osaka places above or at the same level of Seta. I would even go as far as to say the menu I had - a tribute to black winter truffles - would be the perfect exemple to share with someone who doesn't understand why I love to visit places like this. The menu was full of knockout flavours, but the thing for me is that it is easy to make bold, rich flavours like truffles or the more gamey elements on the menu scream loudly, the real beauty here is that they sing in harmony with everything else. And this they managed to perfection in my opinion. Standouts/surprises for me was the fregola dish and the fantastic (and local) coffee. First time for me trying fregola and v60 filter coffee, but not the last! I also have to mention allowing me an off menu serving of the risotto and a chef's kiss touch of a birthday present even though I had not marked my booking as a "special occation". All of the staff was excellent, I don't know what else to say except thank you and hat's off to all of you. Finally the location as a whole deserves mentioning - the hotel and restaurant are stunning and beautifully located. Did not stay in the hotel, but just sitting in the lobby bar before dinner really set the tone.
Overall, I’m disappointed. The service and atmosphere were great, but the flavours were lacking. I prefer straightforward, balanced dishes, and these seemed to have an uneven mix of ingredients. My expectations were high given its Michelin two-star status, but the reality was underwhelming.
