  • Small group of up to 10, taught by a local Milanese chef

Description

Milan has its own kitchen, and it isn't pasta. In this small-group class, a Milanese chef teaches you the two dishes locals are proudest of, in a professional kitchen in the city centre.

Start the way Milan does, with an aperitivo. Your chef mixes a Negroni Sbagliato, the drink invented in Milan in the 1970s (or a non-alcoholic spritz), served with a few bites while you meet the group.

Then get cooking. Learn to toast Carnaroli rice, build a risotto one ladle of stock at a time, and finish it with saffron, butter and Grana Padano for the classic mantecatura. Next, prepare the cotoletta alla Milanese: a veal chop, breaded and pan-fried in clarified butter until golden. Your chef explains how it differs from the Austrian schnitzel, which is an old Milanese argument.

Finish at the table with everything you've made, a glass of Lombard wine, and the recipes to take home.
