Begin your day at Milan Central Station (or directly in Parma with the smart option). If departing from Milan, enjoy a first-class Italo high-speed train ride to Reggio Emilia Mediopadana station. Upon arrival, a private driver transfers you to the Emilian countryside, joining your tour leader and group.
Your first stop is a traditional Parmigiano Reggiano cheese factory. Walk through the ageing rooms filled with thousands of cheese wheels. If you choose the 8:30 AM departure, witness the master cheesemakers remove hot cheese wheels from copper boilers during the 'spinatura' (curd breaking) phase. This rare insight adds a unique element to the visit.
The guided tasting highlights the flavor differences among cheeses aged 12, 24, and 36 months. Next, travel to the hills surrounding Parma, where the specific microclimate enables the production of Prosciutto di Parma.
